Baked with Love on a wood cook stove

Wood Cook Stove Tip!
Always add enough wood to bring oven up to correct temperature before starting to bake!
I am lucky! I have a built in oven thermometer on my J A Roby wood cook stove. I know many of you do not. You will need to add wood and use your damper to help control the oven temperature. My J A Roby also has an air admissions lever that we opened completely, and a deviation lever that I have to adjust all the way to the left. The deviation lever funnels the hot air and smoke from the firebox around the oven to maximize the available heat. You need at least 350 degrees. I added more wood as we baked to keep the fire HOT!

ingredients:
- 1/2 c. packed brown sugar
- 1/2 c. granulated sugar
- 2 sticks butter (1 c.) softened to room temperature
- 1 egg
- 1 t. pure vanilla extract
- 2 c. all purpose flour
- 1/2 t. baking soda
- 1/4 t. kosher salt (regular table salt if you don’t. have kosher)
- 1/2 c. pecans finely chopped
- 36 pecan halves (for tops of cookies)
method:
- cream 2 sticks butter, 1/2 c. brown sugar, 1/2 c. granulated sugar until light and fluffy
- add 1 egg and 1t. pure vanilla extract–beat well
- Add 2 c. all-purpose flour, 1/2 t. baking soda, 1/4 t. salt–stir until well blended
- stir in 1/2 C. finely chopped pecans
- Cover and refrigerate for at least 30 minutes
- On a parchment lined cookie sheet, place 1 inch balls of cookie dough about 2 inches apart.

- Bake until lightly browned around the edges. The time will vary greatly baking on a wood stove, so it is best to check for doneness by other means than time.

Wood Stove Cooking Tip!
Our first batch took forever to bake! I replaced the cookie sheet with one that had holes. Think it was designed for grilling. We lined it with parchment paper and it worked like a dream! The holes allowed the heat to reach the cookie dough better.

Icing Time!

ingredients:
- 2 c. powdered sugar (sifted)
- 1 T. butter
- 1/2 c. milk
- 1 c. brown sugar (packed)
method:–read all directions before you begin!
- sift powdered sugar

Tip: Lay cookies out on parchment paper before you begin cooking icing. You won’t have time after!
- Boil milk and brown sugar for 3 minutes
- Remove from heat and add butter
- Stir in powdered sugar.
Tip: You have to work very quickly. Icing will set up and become a glob! I suggest pouring icing into a 2 cup measuring cup so you can quickly pour a little on top of each cookie.
We tried to spoon the icing on with a tablespoon, but it hardened before we could get all the cookies iced. The ones that were left over were good plain!
- place a whole pecan on top of each cookie and nestle into the soft icing.

Our Weekly Timeless Treasure

This set of Blue Willow china is well over 100 years old. My mother bought it at an antique estate sale when I was a child. My family ran an old country store on the outskirts of Water Valley, Mississippi–East End Grocery. I remember her coming into the store, so excited about this set of china! She was worried about spending the money, but my dad told her to go back and get it if she wanted it. They were married for over 50 years, and I never can remember him ever telling her no!
