So simple–So quick! Only 4 ingredients! And ohhhhh sooooo GOOD!
1 C. sugar
1/2 C. white Karo Corn Syrup
1/4 C. water
2 C. raw peanuts
2 t. baking soda
My mother loved to make peanut brittle when I was a little girl. And I loved to watch. When she added the baking soda at the end, it frothed up like a volcano school science experiment!
Bella’s friend, Emy, came over today to help cook. They whipped up this batch of peanut brittle in less than 10 minutes! And it turned out perfectly! We even used the same old black skillet my mama made it in back in 1964!
Step 1: Measure all ingredients except soda into a black cast iron skillet–you will add the soda at the end.


Step 2: Grease a cookie sheet with butter.

Step 3: Stir well to combine.
Stir together–friends forever! Well, maybe we need two spoons!
Step 4: Cook on stovetop on medium heat until peanuts start to pop. After first pop, time for two minutes. (We only had one peanut pop, so when the candy turned a light caramel color, we added the soda.)
Step 5: Add the 2 t. soda and whip hard. (Watch it foam up like lava in a volcano! So cool!–The kids love it!
Step 6: Turn out onto greased cookie sheet and let cool completely before you touch it!

Step 7: After candy is completely cool, break it into pieces.
